Mutton Kola Urundai Recipe:

Kola Masala Paste:

Coriander Seeds - 2 tsp

Fennel Seeds - 1 tsp

Cinnamon - 1 inch

Cloves - 2 no

Cardamom - 1 no

Poppy Seeds - 2 tsp

Dried Red Chilli - 6 nos

Curry Leaves - 20 nos

Coriander Leaves - 2 tbsp

Ginger - 1 inch

Garlic - 5 cloves

Shallots - 8 nos

Coconut (grated) - ½ Cup

Salt - 1 tsp

Water - 5 tbsp



Other Ingredients:

Mutton (minced) - 250 grams

Fried Gram - 1 Cup

Oil - To Deep Fry



Cooking Instructions:

1. Grind the fried gram dal into a fine powder using a mixer grinder.

2. Grind all the ingredients mentioned under Kola Masala Paste into a fine paste using a mixer grinder.

3. In a pan, add the minced mutton meat and cook without adding oil or water. The water coming out of the meat will be good enough. Cook the meat until all the water is evaporated and the meat browns. Should take around 4 mins.

4. Grind the meat in a mixer grinder.

5. In a mixing bowl, add the cooked and ground meat, kola masala paste and powdered fried gram dal. Mix everything together to form a soft dough.

6. Apply a little oil on to your hands. Make small round balls of the kola mixture.

7. Heat oil in a deep frying pan, On medium heat fry the kola balls for 3 mins.



8. Serve hot as an appetizer.

Spicy pomphret fry


Ingredients


  1. Pomphret 2 peices (approximately 500 gms)
  2. Oil for shallow frying (about half a cup)
  3. Juice of 1 lime
  4. 2 sprigs of curry leaves
  5. 2 tbsps of rava
  6. Corriander leaves to garnish


For the masala

  1. 7 kashmiri red chillies (u can use 5 normal red chillies instead)
  2. 10 pods of garlic
  3. 1 inch peice of ginger
  4. 1 handful of corriander and mint leaves together
  5. 1 tsp of soaked poppy seeds
  6. 1 tsp of rock salt
  7. 1 tsp of garam masala
  8. 1tsp of pepper corns
  9. 1/2 a tsp of tumeric powder



Steps to make it
  • Wash the fish and make gashes (slits) on each side
  • Grind all the ingredients listed under the for the masala into a smooth paste.
  • Now apply the masala paste to the fish
  • Add the lemon juice.
  • Coat the fish in the rava.
  • Add the curry leaves to the fish(This enhances the flavor and taste of the fish)
  • Marinate for half an hour.
  • Heat oil in pan
  • When the oil is hot, add the fish and fry on medium flame for 4 mins then flip and fry the other side for another four minutes
  • The cooking time differs according to the size of the fish
  • Remove from the oil drain on a paper towel and sprinkle some chopped corriander leaves and serve hot
